Chicken Zoodle Soup in a Jar
Ingredients (Serves 4):
- 1 tbsp olive oil
- 3 chicken breasts, diced
- 4 cloves garlic, minced
- 2 small yellow onions, diced
- 3 stalks celery, chopped
- 2 carrots, peeled and chopped
- 1 red pepper, diced
- 1 tsp thyme
- 1 tsp parsley
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- 4 chicken bouillon cubes
- 4 cups spiralized zucchini noodles (If you don’t own a spiralizer, many grocery stores sell pre-spiralized zucchini noodles in the produce section.)
Instructions:
1. Heat olive oil in a large skillet over medium-high heat.
2. Add diced chicken and cook for 1-2 minutes, stirring occasionally.
3. Add garlic, onions, celery, and carrots. Sauté for 6-7 minutes until the vegetables are tender.
4. Stir in red pepper, thyme, parsley, and oregano, cooking for another 2 minutes. Remove from heat.
5. Divide the chicken and vegetable mixture evenly among four large mason jars.
6. Add one bouillon cube to each jar, then top with 1 cup of spiralized zucchini noodles.
7. Seal the jars and store them in the refrigerator for up to four days.
