Ashley Iannaco of Southern New Hampshire Health shows how to make this Mediterranean-style salad.
Ingredients:
1 can garbanzo beans, rinsed and drained
1/2 cup tomatoes, chopped
1/4 red onion, diced
1 cucumber, chopped
1 tsp garlic
2 tsp fresh dill
1 1/2 tsp red wine vinegar
2 tbsp olive oil
1 tbsp fresh parsley, chopped
Directions:
1. Chop salad ingredients, combine together in large bowl.
2. In a separate bowl, whisk together dressing ingredients.
3. Pour dressing into salad, mix to combine. Serve chilled and top with additional fresh parsley if desired.
